We got to see a whole new side of university foodservice this past weekend in catering. Kyla and I catered for different events that gave us each a look into the process. Kyla catered for the Spignesi Scholarship Banquet in the Rome Ballroom. This was a hot buffet with alcohol service. I catered for the Benton Fundraiser in the Jorgensen main auditorium. This was a reception with stationary tables and passed hors d'oeuvres. Later in the evening we switched to desserts and coffee. I think that an important lesson learned in catering is how to problem solve and make things work in a short amount of time. I was blown away with the stories about having over 30 events in one day! I learned that some of the keys to successful planning are organization, keeping deadlines, communication, and having a positive attitude :)
